I think this will be my recipe for thursday afternoon/evening brew. I'll tweak it a little bit as my mashtun is only a keg and maxes at 15 gallons.

Initially I plan to pitch 1762 belgian abbey II in 5 gallons and pacman in the other 5. I have a vial of white labs high gravity yeast I might pitch into the carboys after a couple days to help things along and get that FG as low as I can.

That is going to be one big beer. Are you going to bottle some and age it for a few years?

I hate bottling, but with this one I might do just that. Keg 5 gallons and bottle 5 gallons. I wish I had a bunch of 2.5 or 3 gallon cornies to be able to split batches half and half, since I'm using 2 different yeasts on brews lately.
